Zuppa Toscana

Ingredients

  • 1 lb Italian sausage
  • 8 slices bacon - cooked and chopped
  • 3/4 large onion - chopped
  • 2 large Russet potatoes - cut in half then 1/4 inch slices
  • 1 quart water
  • 2 cans chicken broth (24 oz total)
  • 2 large cloves garlic - minced
  • 1/2 t red pepper flakes
  • 2 cups chopped kale (bite size pieces)
  • 1 c heavy cream
  • salt and pepper to taste
  • Directions

    1. Bake Italian sausage in oven for approx 30 minutes at 325, chop into bite-size pieces.
    2. Cook bacon, drain, chop and set aside.
    3. Place onions, potatoes, chicken broth, garlic, red pepper and water in pot, and cook on medium heat until potatoes are near done (approx 10 minutes).
    4. Add bacon and sausage.
    5. Reduce to low heat.
    6. Add kale and cream, heat through (about 5 minutes) and serve.
